My friend recommended that I try the Free Run eggs from Rabbit Farm. I decided to make a rice bowl with a poached egg for brunch to try out these eggs. The egg and pork turned out really nice!
- 300g pork
- 2 teaspoons Awase Miso
- 1 teaspoon honey
- 1 teaspoon soy sauce
- 1 teaspoon cooking sake
- 1 teaspoon mirin
- black pepper
Cut pork into 1 cm thick slices. Marinade with the rest of the ingredients for a few hours. If you don’t have much time you can pound and poke the pork with fork to speed up the marinade process. Cook on grill pan over medium heat about 3 minutes on each side.
Poached Egg (based on a recipe from Food Network Website)
Add 1 teaspoon and 2 teaspoons and water to a small pot. Bring to simmer over medium heat. Swirl the water and add the egg into the middle of whirlpool. Cover the pot and turn off the heat.
Serve over hot steamed rice :).
